We dedicate this post to the ladies in the school kitchens, working under unbearable conditions when using traditional stoves or 3-stone fires. Smoke, flying ash, soot, heat and flames threatening from all sides put their stamina to the limit. Usually underpaid - the average monthly salary for a school cook is USD 35 - they start their day very early in the morning to make sure the porridge is ready by 7am, to continue with the tireless job of preparing lunch (and supper for those boarding) and then serving the food to the children, always with a smile in their faces.
